Because it is so sugary, I’m surprised that ANYTHING would grow in it. I know my honey crystallizes in the cabinet. I just nuke it in the microwave on half power for 30 second intervals and stir until the crystals dissolve. But I’m not sure what the cherries would do. For SURE, I would put a saucer on top while nuking it! I’m keeping my cherries in the fridge. And if I get spots, I’ll spoon them out and then try the microwave trick on it. What have I got to lose? When they bottled the cherries, heat had to have been involved somewhere along the line. If yours is older, maybe the sugar is just crystallizing from lack of moisture. After you remove the spots, maybe stir in a teaspoon of DISTILLED WATER before you nuke it? Not tap. Or Spring. Those contain contaminates which might make worse spots in it. These ARE the best cherries I’ve ever bought. Enjoy yours, and good luck!
