I certainly enjoy ahi and hamachi sashimi, but I’ve never heard of eating raw wahoo. I have some beautiful wahoo fillets in my freezer as prepared and packaged by Sarah and the crew at Five Star, but do I need to cook them, or can they be enjoyed raw?

Wahoo is delicious! Have it raw or lightly seared all the time…love it. Like all fish, it is recommended you let it rest a day and freeze it prior to raw consumption.

I don’t eat fish but I throw big Sushi/Sashimi parties after my trips and I use Wahoo the same as tuna. Try a spicy wahoo mix just like spicy tuna… I am told it is amazing by those I serve it too….. Of course we also have various sections of Tuna and Wahoo raw as well.
It would be interesting to know, from those who actually eat this stuff, if the low fat content Wahoo actually have a more buttery back strap portion or if it is consistent all the way through. After all these decades…. I still have no idea about that… Maybe someone else knows….

make sure its actually wahoo. I’ve been to a few places that say they have wahoo, upon further inspection the suspect fish ended being escolar, if you eat too much of that you’ll get some nasty diarrhea.

I don’t eat fish (sushi rarely) but I do make a killer Wahoo Sashimi. I sear it like BFT and every one raves about it. Also works out great in Poke and Ceviche too.

She re-used, over and over again, fat from Chicken, Beef, etc. to fry the fish in for at least 10 years in a Yuban Can under the sink without ever changing it out. Heck, I did not even know store bought Lard was white. I thought it was a putrid brown with small chunks of browner stuff floating in it. I can still remember the smells from her kitchen as I came in through the porch to this day…

Yeah, its wahoo…and they used to sell escolar sushi too. The seared escolar was the tastiest sushi I’ve ever eaten, but even so, I never got more than one order of it to avoid the digestion issue.

Two ways I like Wahoo, other than baked or grilled. I sear it rare, first rubbed with Dill, and then seared in a Lemon flavor Olive Oil. Wahoo makes a great Ceviche, even better that Mahi if you can imagine.

Ok, I’m finished with dinner, including about a full pound of wahoo sashimi. Simple, raw with soy and wasabi. Very tasty, so I will do it again; however, I must admit that for raw fish, I prefer yellowtail and yellowfin.

Wahoo sashimi is great as long as it is fresh or RSW fish. RSW fish has been sitting around for awhile so it is tender. Wahoo ceviche is really good too.

Wow, growing up I remember those Yuban cans in a similar way…we used to discard bacon fat and grease in them til they got full to the brim, then toss them in the trash w. the plastic lid on. Now using that old discarded, probably rancid fat to cook with for 10 years…can’t even imagine that….

Wahoo is just as tasty as all the traditional Tuna preparations…..Seared…raw…it’s awesome…no worries…This year my freezer is fat with Wahoo…thank you EL Nino for spoiling me this year….I hope to continue to reap your bounty soon!
