While many vegetables are fine to buy frozen, we recommend buying fresh broccoli when your plan is to roast it. Look for broccoli with firm stems and florets. (Yellow, limp florets and damp or decayed leaves are telltale signs that the broccoli is starting to spoil.)

What you’ll need:
• 1 head broccoli
• 1 tbsp. olive oil
• 1/4 tsp. salt
