The biggest problem we all have with store-bought gravlax is the over salted salmon. The formula is simple: salt + sugar 50% of the weight of salmon. Marinade for 24 hours for light, 36 hours for medium and 48 hours for firm.

Ingredients
- 1 tbsp white peppercorns (whole) (Note 1)
- 1/2 cup fresh dill, roughly chopped
- 120 g rock salt
- 120 g white sugar
- ½ kg salmon, bones removed and skin on
- Mustard Sauce:
- 1/2 cup cream cheese light
- 1/3 cup Dijon Mustard
- Salt and pepper
- To Serve
- Bread slices
- More dill, for serving
- Lemon wedges
- 1/4 cup fresh dill, roughly chopped (for garnish)

Instructions
- Crush peppercorns with the side of a knife. Combine peppercorns with salt, sugar and dill.
- Place 2 large pieces of cling wrap on a work surface, slightly overlapping. Spread half the salt mixture in the shape of the salmon. Place salmon on salt, skin side down. Top with remaining salt mixture.
- Wrap with cling wrap. Place in a large dish. Top with small cutting board) then 2 x 400g cans for weights.
- Refrigerate for 12 hours. Turn salmon over and return to fridge. After another 12 hours, turn salmon over again. After another 12 hours, remove salmon from fridge.
- Unwrap salmon, scrape off salt then rinse. Return to the fridge for 3 – 12 hours uncovered to dry surface.
- Sprinkle over the 1/4 cup dill – for garnish and flavour. Serve with toasted bread, Mustard Sauce, extra dill and lemon wedges.
- Mustard Sauce
Mix ingredients, making sure to season with salt and pepper. It should taste like a creamy mustard. You can add lemon if you wish.
