Cheese curds are milk that never quite made it to being cheese.  If curds are to become cheese, they are either stretched or pressed together to form a wheel or block of cheese, then there is the brining and the ageing. Some cheese curds are cheddared (yes, cheddar is a verb), but ours do not even experience this.  

Cheese curds possess a unique springy, bouncy feel as you chew them and they have wonderful melting properties.  Below is a list of ways you can incorporate cheese curds into your life.  

1. Snack on curds.  This is one of the few times no one cares if you eat cheese plain.  Eat a block of cheese like a candy bar? Not supposed to.  Take all the cheese off of the platter and leave the crackers? Frowned upon.    Shovel handfuls of curds into your mouth?  Socially accepted.   Having your curds at room temperature or popping them into the microwave for 15 seconds makes them even better.  

2. Curds melted on bread.  If you have a toaster oven, you know what to do here. If you don’t have a toaster oven, you can use that broil setting.  It’s like a fire coming from the top of your oven.  These curd chunks will maintain some of their squishyness when they melt, not just turn into a pool of cheese.  If you are actually making a meal here, put some spinach, tomato, or meat under your curds.  

3. Macaroni and curds.  Any noodles – throw some curds in there right after draining and let them soften up. Bonus if you use Italian curds in Italian dishes.  

4. Salads with curds. Curds add protein to any salad. It is nutritionally beneficial to add cheese curds to your greens.  

5. Curds in casseroles.  Please do not add our cheese curds to hotdishes, these curds are from Iowa and are only suitable for every casserole. Tater tot, green bean, broccoli and cheese, corn, chicken enchilada, the list never ends.  Curds won’t liquefy like shredded cheese or turn rubbery like chunks of cheese.
