QUESTION: What’s the best way to cook Israeli (pearl) couscous? What are some good ways to use it? — Barbara Prais-Hein, Dearborn Heights

ANSWER: Couscous, a North African staple, is tiny semolina pasta. It comes in two sizes, regular and Israeli, or pearl. Because of its small size, couscous is often mistaken for a grain. But just like most pasta, couscous (regular or Israeli) is made with semolina and water.

Israeli couscous cooks much like rice, except that it tends not to get mushy. The liquid is absorbed and the tiny beads puff up. For the liquid, you can use water or vegetable or chicken broth. Because this pasta is so small, like tiny beads, it cooks rather quickly. To cook pearl couscous, stir it into cold water, bring to a boil and then keep it at a high simmer about 8 to 10 minutes, uncovered, or until tender.

Over the years, Israeli couscous has become my go-to couscous. Sometimes I simply season it and serve as a side dish; other times I mix it with other ingredients. I like the Israeli couscous for its size, slightly chewy texture and light flavor. You can substitute Israeli couscous for rice or in dishes that call for orzo.

Most grocery stores stock both regular and Israeli couscous in the ethnic foods aisle. You can find Israeli couscous in plain, whole wheat and tricolor varieties.

Here are some of my favorite ways to use Israeli couscous:

■ Pair with herbs: Couscous goes with most any herb. Mint, basil, tarragon, parsley and chives go particularly well.

■ Try this side dish: Sauté some onion, garlic and chopped red, yellow or orange peppers before adding the Israeli couscous. Just before serving, add a few heaping tablespoons of shredded or grated Parmesan, asiago or fontina cheese. Another option: Mix pearl couscous with chopped sun-dried tomatoes that have been packed in oil along with some chopped artichokes. The oil from the sun-dried tomatoes is all that is needed to dress the couscous.

■ Make a salad: The tiny pearls of Israeli couscous are great mixed with a peppery arugula or other mixed salad greens and tossed with a vinaigrette emulsified with Dijon or a sweet mustard.

■ Pair with fruit: One popular salad features couscous and watermelon along with feta or goat cheese and sometimes salad greens. I love the blend of the chewy pasta, the tangy cheese and the peppery bite of arugula leaves. You can serve it plain or lightly drizzled with a lemon- or lime-based vinaigrette. Other options for this salad include adding peppery arugula or watercress, fresh mint, basil or cilantro or substituting cantaloupe or other favorite melon.

Watermelon, Arugula and Israeli Couscous Salad

Serves: 4 / Preparation time: 15 minutes / Total time: 25 minutes

6 tablespoons olive oil, divided

1 cup Israeli couscous

2 cups water

Salt to taste

2 to 3 cups cups watermelon, rind removed, seeded and cubed or diced

3/4 cup favorite cubed soft cheese (feta, goat cheese, ricotta salata, fresh mozzarella)

1/3 cup basil, washed and chopped

1 cup arugula, washed and chopped

1/4 cup white wine or sherry vinegar

Heat 1 tablespoon of the olive oil over medium-high heat in a medium saucepan and add the couscous. Stir until the couscous begins to color and smell toasty, 4 to 5 minutes. Add 2 cups water and salt to taste and bring to a boil. Reduce the heat, cover and simmer 15 minutes, or until the couscous is tender. Drain if any liquid remains in the pan.

Spread couscous evenly on a baking sheet, drizzle 2 tablespoons of olive oil on top and stir.

Cover in plastic wrap and cool in the refrigerator.

Prepare all the remaining ingredients.

In a large bowl, combine the cooled couscous, watermelon cubes, cheese, basil and arugula. In a separate small bowl, whisk together the remaining 3 tablespoons olive oil, vinegar and salt to taste. Pour over salad and toss to thoroughly coat.

Israeli Couscous, Sun-dried Tomatoes, Artichokes and Feta

Serves: 6 / Preparation time: 15 minutes / Total time: 25 minutes

Turn this into a main dish by adding chunks of cooked chicken.

1/3 cup water

1 can (141/2 ounces) vegetable broth

13/4 cups uncooked Israeli couscous

1/2 cup oil-packed sun-dried tomatoes, chopped

1/2 cup (2 ounces) crumbled feta cheese

1/2 cup fresh chopped flat-leaf parsley

1/2 cup loosely packed shredded basil

1 cup marinated artichoke hearts, coarsely chopped

2 to 3 tablespoons olive oil

Salt and black pepper to taste

Place water and vegetable broth in a large saucepan; bring to a boil. Stir in couscous. Cover, reduce heat and simmer for 8 minutes or until tender.

Remove from heat; stir in tomatoes, feta, parsley, basil and artichoke hearts. Drizzle with olive oil and season with salt and freshly ground black pepper to taste.
